Daniel Martin Sanchez has worked with the greatest chefs in Spain and he is now rejuvenating the concept of tapas with San Leandro

As a child, I loved the flavours of fresh tomatoes which I used to pick with my father in the garden. We still share this activity. I love the simple great products and Spain - especially Andalusia - there is always an abundance of them to be found in the Spanish market place.

I am thinking of our Iberian Ham, charcuteria, fine olive oils, shrimps from Huelva, mushrooms, vegetables and spices... Without great products, you donít make much of a chef... It is the most important rule and I never forget about it.
